Chicken with braised vegetables one pot wonder

Another delicious and healthy winter one pot wonder recipe to tantalise your tastebuds! Follow the recipe below to make this tasty Chicken and braised vegetables dish for 4 people.


1.5 kg chicken
25g butter
200g smoked back bacon
1kg potatoes
16-20 shallots or one small onion
½ bottle white wine
250g frozen peas
Bunch soft green herbs (tarragon, parsley and/or chives)


1. Heat oven to 200oC/Gas mark 7.
2. Season the chicken with salt and pepper to taste.
3. Melt butter in a stove top casserole dish.
3. Brown chicken on all sides.
4. Fry bacon until crisp.
5. Add potatoes and shallots/onion and cook until they start to brown.
6. Add vegetables and wine, cover then roast in oven for at least one hour or until chicken is cooked.
7. Remove chicken and place the dish back on the heat. Stir in peas adding a splash of water if pan is a little dry.
8. Stir through herbs and serve with chicken.
