Our last blog post highlighted the importance of starting the day with a good, healthy breakfast - we shared some great ideas to liven up breakfast time and promised to post some delicious and healthy recipes of our own. And here they are...

Recipe 1 - Breakfast muffins 

(makes 12)

Ingredients

125g plain flour
75g wholemeal flour
200g rolled oats
75g brown sugar
3 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 bananas, mashed
2 large eggs, separated
3 tbsp sunflower oil
250ml milk
125g blueberries

Instructions

  1. Preheat oven to 200°C/Gas mark 6.
  2. Mix plain flour, wholemeal flour, oats, brown sugar, baking powder, salt and cinnamon in a large mixing bowl.
  3. Add mashed banana, egg yolks, milk and sunflower oil to the dry ingredients and mix gently with a wooden spoon until a wet batter forms. It might be a little lumpy but that’s fine.
  4. In a separate clean, great free bowl whisk the egg whites until soft peaks form.
  5. Gently fold egg whites into the batter, add blueberries and mix thoroughly.
  6. Divide muffin mixture between 12 individual muffin cases and place in oven for 25 minutes or until risen and golden brown.

Note: Muffins will keep for up to 4-5 days if stored in a sealed tin or plastic container. Muffins can also be frozen; place in a zip lock plastic bag, thaw for 1 hour or until defrosted then pop in the oven for 10 minutes to reheat.

Recipe 2 - Bacon and Egg Poppets 

(serves 4)

Ingredients

4 sprays of cooking spray
4 medium slices of bread (crusts removed and cut into four triangles)
4 medium eggs
1 rasher medium back bacon (chopped into small pieces)
Salt and pepper to taste

Instructions

  1. Preheat oven to 180°C/Gas Mark 4.  Spray four hole muffin tin with cooking spray.
  2. Place four triangles of bread in each hole, press down to cover sides and bottom to form a cup shape, points of triangle sticking up.
  3. Crack one egg into the middle of each cup.
  4. Divide the chopped bacon pieces between the cups.
  5. Bake for 15 minutes or until the egg white is set.
  6. Sprinkle with pepper and salt and then serve.
